
The Dining Room
Our dining room is designed around the three most important elements; our guests, our food and our wine.
The open space is light yet cosy. A feature fireplace punctuated with an overlaying skylight ensures we offer the warmth of a traditional Welsh pub setting, with a contemporary twist. The kitchen is tucked away just off the dining room, allowing for a quiet relaxed atmosphere but still close enough for the aroma of freshly cooked cuisine to fill the room. In the summer, our bi-folding doors open to our beautiful beer garden which hosts our herb pots and hanging baskets.
Working in tandem with the seasons, our chefs create a constantly changing menu that uses meats sourced from our partner farm, Penllyn Estate, located in our local market town of Cowbridge, along with produce from Forage Farm Shop.
Our dining room is open Thursday - Sunday serving lunch and dinner.



Our Chef Team
Dmitri Bayliss - Executive / Head Chef
Dmitri is a renowned chef around The Vale, having previously worked at a number of award-winning restaurants, as well as Head Chef at The Coed y Mwstwr Hotel, St Davids Hotel, La Gallois and MoJo.
Dmitri is classically trained and his love of locally sourced, seasonal, quality ingredients makes him the ideal match for The Roost. You can find him baking fresh bread in the morning or smoking one of our menu staples, The Roost Ribs.
